vada

Ingredients:

1/2 cup Moong Daal

1/2 cup Urad Daal

2 tbsp.chopped coriender

1 1/2 Green Chili Ginger paste

1 tbsp. Salt

1/4 tsp.Baking Soda

Recipe Method:

Soak urad daal and moong daal for 2-3 hours.

Grind daals into a coarse paste.

Add green chilli ginger paste,coriander,salt,and soda.mix well and set aside for 4-5 minutes.

Fry small spoonfuls of the mixture in hot oil.

Serve hot with green chutney and sambhar.

spicy sev


Ingredients:

2 cups gram flour (besan)

1/2 tsp. ajwain (omam) seeds

1 1/2 tsp. red chilli powder

1 tbsp. oil

salt to taste

2-3 pinches asafoetida

water to make dough

oil to deep fry

Method:

Mix the chilli, oil, salt and seeds into the flour.

Add enough water to make a dough which is quite gooey.

It should not be pliable but sticky.

Grease the inside of a Sev-press, fill with the dough.

Press into hot oil, and fry lightly on both sides.

Drain well and cool before storing.

You may add finely crushed dried herbs like mint, garlic,green chilli,black pepper for add flavour.
